Cannellini and Sweet Corn Salsa

1, 14.28 oz. can
Carmelina Brands® Italian Cannellini Beans, rinsed and drained
3 cups
Fresh tomato, seeded, chopped
1 each
Avocado, chopped
1/2 cup
Red onion, finely chopped
1 cup
Frozen corn kernels, thawed
1/2 cup
Green onions, thinly sliced
1 each
Jalapeno, seeded and finely chopped
3 tablespoons
Fresh cilantro, chopped
3 tablespoons
Extra virgin olive oil
2 tablespoons
Fresh squeezed lime juice
1 teaspoon
Kosher salt
1/4 teaspoon
Black pepper
1/4 teaspoon
Ground cumin
  1. In a medium glass bowl, add Carmelina Brands® Italian Cannellini Beans, fresh tomato, avocado, red onion, corn kernels, green onions, jalapeño, cilantro, olive oil, lime juice, salt, black pepper and cumin. Stir to combine.
  2. Cover and chill Cannellini Beans and Sweet Corn Salsa for at least one hour before serving.
  3. Spoon the Cannellini Beans and Sweet Corn Salsa into an attractive serving dish. Serve salsa as an accompaniment to grilled chicken or fish, or as a refreshing side salad.
