Creamy Cauliflower Tomato Curry
In a large saucepan with lid, heat oil over medium-low heat. Add onions and garlic, and sauté until soft and translucent; about 3 minutes. Increase heat to medium-high, and add Carmelina ‘e…San Marzano® Italian Chopped Tomatoes in Puree, Carmelina Brands® Italian Garbanzos, salt, pepper and curry powder. Stir to combine. Add cauliflower florets. Cover and simmer for 15 minutes; stirring occasionally. Stir in sour cream or yogurt. Continue to simmer mixture to allow flavors to meld, and cauliflower to slightly soften; about 5 minutes. Check seasonings. Adding additional curry powder if desired. Garnish with cilantro. Remove Creamy Cauliflower Tomato Curry from heat and serve immediately. Nice accompaniment to grilled chicken or fish, or as a vegetarian entrée over Basmati rice. Mangia Bene!
